- 1 1/2 pounds chicken breasts or thighs, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- Salt and black pepper, to taste
- Juice of 1 lime
- 4 torta or bolillo rolls, sliced
- 1 avocado, sliced
- 1 tomato, sliced
- 1/2 small red onion, thinly sliced
- 1 cup shredded lettuce
- 1/2 cup refried beans (optional)
- Mayonnaise, sour cream, or Greek yogurt with lime
Instructions
- Toss chicken with olive oil, paprika, cumin, garlic powder, salt, pepper, and lime juice.
- Heat skillet or grill pan over medium-high heat and cook chicken 5–7 minutes until golden and cooked through.
- Lightly toast torta rolls cut-side down.
- Spread mayonnaise or sour cream on rolls. Add refried beans if using.
- Layer chicken, avocado, tomato, onion, and lettuce.
- Top with cheese or cilantro if desired. Close sandwich and serve warm.
