Ingredients

  • 1 1/2 pounds chicken breasts or thighs, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Juice of 1 lime
  • 4 torta or bolillo rolls, sliced
  • 1 avocado, sliced
  • 1 tomato, sliced
  • 1/2 small red onion, thinly sliced
  • 1 cup shredded lettuce
  • 1/2 cup refried beans (optional)
  • Mayonnaise, sour cream, or Greek yogurt with lime

Instructions

  1. Toss chicken with olive oil, paprika, cumin, garlic powder, salt, pepper, and lime juice.
  2. Heat skillet or grill pan over medium-high heat and cook chicken 5–7 minutes until golden and cooked through.
  3. Lightly toast torta rolls cut-side down.
  4. Spread mayonnaise or sour cream on rolls. Add refried beans if using.
  5. Layer chicken, avocado, tomato, onion, and lettuce.
  6. Top with cheese or cilantro if desired. Close sandwich and serve warm.
