Description

This easy chicken taco soup recipe is a quick and flavorful meal, perfect for a hearty dinner. It’s a classic chicken tortilla soup with a delicious taco twist.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (4 ounce) can chopped green chilies
  • 4 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken breasts and cook until browned on both sides. Remove chicken and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Return chicken to the pot. Add diced tomatoes, black beans, pinto beans, diced tomatoes and green chilies, chopped green chilies, and chicken broth.
  4. Stir in chili powder, cumin, oregano, and cayenne pepper (if using). Season with salt and black pepper.
  5. Bring the soup to a boil, then reduce heat, cover, and simmer for at least 20 minutes, or until chicken is cooked through and tender.
  6. Remove chicken from the pot and shred it. Return the shredded chicken to the soup.
  7. Simmer for another 5-10 minutes to allow flavors to meld.
  8. Serve this delicious chicken taco soup hot.

Notes

  • For a spicier chicken taco soup, add more cayenne pepper or a pinch of red pepper flakes.
