- 8 cups chicken broth
- 2 cups cooked chicken, shredded

- 1 teaspoon dried parsley
- 1 bay leaf
- 2 cups egg noodles
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, sliced carrots, and celery. Sauté for about 5-7 minutes until softened.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the chicken broth to the pot, stirring well to combine with the vegetables.
- Stir in the shredded chicken, dried thyme, dried parsley, and bay leaf. Bring to a boil.
- Once boiling, add the egg noodles. Reduce heat and simmer for 10-12 minutes or until noodles are tender.
- Taste the soup and season with salt and pepper as needed.
- Before serving, remove the bay leaf from the soup.
- Serve hot, garnished with fresh parsley if desired.
