  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 2 cups egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, sliced carrots, and celery. Sauté for about 5-7 minutes until softened.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add the chicken broth to the pot, stirring well to combine with the vegetables.
  5. Stir in the shredded chicken, dried thyme, dried parsley, and bay leaf. Bring to a boil.
  6. Once boiling, add the egg noodles. Reduce heat and simmer for 10-12 minutes or until noodles are tender.
  7. Taste the soup and season with salt and pepper as needed.
  8. Before serving, remove the bay leaf from the soup.
  9. Serve hot, garnished with fresh parsley if desired.
