Ingredients

  • 2 cups uncooked pasta (penne or rotini recommended)
  • 1 pound boneless, skinless chicken breasts, diced
  • 2 cups fresh broccoli florets
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups shredded cheddar cheese
  • 1 cup cream or milk
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring salted water to a boil. Add the pasta and cook until al dente, according to package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the diced chicken, season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 6-8 minutes.
  4. Stir in the chopped onion and minced garlic. Cook for an additional 2-3 minutes until the onion is translucent. Add the broccoli florets and cook for another 2-3 minutes.
  5. In a separate bowl, mix together the cream, chicken broth, and half of the cheddar cheese. Stir until well combined.
  6. In a large mixing bowl, combine the cooked pasta, chicken mixture, and sauce. Mix well to ensure everything is evenly coated.
  7. Pour the mixture into a greased 9×13-inch baking dish.
  8. Sprinkle the remaining cheddar cheese and Parmesan cheese evenly over the top.
  9. Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the cheese is bubbly and golden brown.
  10. Remove from the oven and let it sit for 5 minutes before serving.
