  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup shredded cheddar cheese

  • 1 cup cooked rice
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • Salt and black pepper to taste
  • ¼ cup fresh cilantro, chopped (optional)

Instructions

  1. Season the thinly sliced chicken breast with garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. Add the sliced red and green bell peppers to the same skillet. Sauté until tender-crisp, about 5 minutes.
