Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling
  • 10 egg roll wrappers
  • Oil for frying (vegetable or canola)
  • Powdered sugar for dusting (optional)

Instructions

  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  2. Gently fold in the cherry pie filling until it is evenly distributed within the cream cheese mixture.
  3. Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Spoon about 2 tablespoons of the cherry cheesecake filling onto the center of the wrapper.
  4. Fold the bottom corner over the filling, then fold in the sides. Roll it up tightly to seal. Use a bit of water to help seal the edges if necessary.
  5. In a large skillet or deep fryer, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).
  6. Carefully place the egg rolls in the hot oil, frying in batches to avoid overcrowding. Cook for about 2-3 minutes on each side until they are golden brown and crispy.
  7. Once cooked, remove the egg rolls and place them on a plate lined with paper towels to absorb any excess oil.
