- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup cherry pie filling
- 10 egg roll wrappers
- Oil for frying (vegetable or canola)
- Powdered sugar for dusting (optional)
Instructions
- In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Gently fold in the cherry pie filling until it is evenly distributed within the cream cheese mixture.
- Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Spoon about 2 tablespoons of the cherry cheesecake filling onto the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides. Roll it up tightly to seal. Use a bit of water to help seal the edges if necessary.
- In a large skillet or deep fryer, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).
- Carefully place the egg rolls in the hot oil, frying in batches to avoid overcrowding. Cook for about 2-3 minutes on each side until they are golden brown and crispy.
- Once cooked, remove the egg rolls and place them on a plate lined with paper towels to absorb any excess oil.
- If desired, lightly dust the warm egg rolls with powdered sugar for an extra touch of sweetness.
- Allow the egg rolls to cool for a few minutes before serving. They are best enjoyed warm!
