- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups tortilla chips, crushed
- 2 cups shredded cheddar cheese
- 1 can black beans, drained and rinsed
- 1 cup corn (canned or frozen)
- 1 cup sour cream
- 1 cup diced tomatoes
- ½ cup sliced green onions
- 1 avocado, diced (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
- Stir in the taco seasoning and salsa, mixing well to combine. Cook for an additional 2-3 minutes until heated through.
- In a greased casserole dish, layer the crushed tortilla chips at the bottom.
- Spread the seasoned beef mixture evenly over the chips.
- Sprinkle the black beans and corn over the beef layer.
- Generously sprinkle shredded cheddar cheese on top of the mixture.
- Place the casserole in the preheated oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly.
- While the casserole is baking, prepare your toppings. Dice tomatoes, slice green onions, and avocado if desired.
- Remove the casserole from the oven and let it cool for a few minutes. Top with sour cream, diced tomatoes, green onions, avocado, and cilantro before serving.
