Description

Cheesy Walking Taco Casserole is a delicious and satisfying dish that combines all your favorite taco ingredients in one easy casserole.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups tortilla chips, crushed
  • 2 cups shredded cheddar cheese
  • 1 can black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 cup sour cream
  • 1 cup diced tomatoes
  • ½ cup sliced green onions
  • 1 avocado, diced (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  3. Stir in the taco seasoning and salsa, mixing well to combine. Cook for an additional 2-3 minutes until heated through.
  4. In a greased casserole dish, layer the crushed tortilla chips at the bottom.
  5. Spread the seasoned beef mixture evenly over the chips.
  6. Sprinkle the black beans and corn over the beef layer.
  7. Generously sprinkle shredded cheddar cheese on top of the mixture.
  8. Place the casserole in the preheated oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly.
  9. While the casserole is baking, prepare your toppings. Dice tomatoes, slice green onions, and avocado if desired.
  10. Remove the casserole from the oven and let it cool for a few minutes. Top with sour cream, diced tomatoes, green onions, avocado, and cilantro before serving.
