Instructions

  1. In a shallow dish, whisk the large egg with fresh herbs, salt, black pepper, and cayenne pepper (if using) until well combined.
  2. Carefully dip each bread slice into the egg mixture, ensuring both sides are evenly coated. Allow any excess to drip off.
  3. Heat a non-stick pan over medium-low heat. Place the dipped bread slices in the pan. Cook for 3-5 minutes per side until golden brown and the egg is set.
  4. After flipping each slice, immediately sprinkle ½ cup grated cheese evenly over the top. Cook an additional 2-3 minutes, or until the cheese is beautifully melted and bubbly. For extra gooey cheese, cover the pan for the last minute.
