- 3 large eggs, room temperature
- 1/2 cup (60g) all-purpose flour
- 1/2 cup (120ml) milk, room temperature
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika (optional)
- 1/2 cup (50g) shredded sharp cheddar cheese
- 4 strips cooked bacon, chopped
- 2 tablespoons unsalted butter (for the skillet)
- Fresh chives or green onions, for garnish
Instructions
- Preheat oven to 425°F (220°C). Place a cast iron skillet inside to heat.
- Whisk together eggs, milk, flour, salt, pepper, garlic powder, and paprika until smooth. A blender can also be used.
- Carefully remove the hot skillet from the oven, add butter, and swirl to coat.
- Pour the batter into the skillet. Sprinkle cheddar cheese and chopped bacon evenly on top.
- Return the skillet to the oven and bake for 18–20 minutes, until puffed and golden brown around the edges.
- Garnish with fresh chives or green onions and serve immediately while warm.
