- 1 pound calamari, cleaned and sliced into rings
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 can (14 ounces) diced tomatoes
- 1/4 cup black olives, pitted and sliced
- 2 tablespoons capers, drained
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges, for serving
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute, or until fragrant.
- Pour in the diced tomatoes, including their juice, and stir to combine.
- Add the sliced olives and capers to the skillet. Mix well.
- Sprinkle in the red pepper flakes, salt, and pepper. Let the sauce simmer for about 5 minutes to meld the flavors.
- Gently add the calamari rings to the sauce. Cook for 2-3 minutes, stirring occasionally, until the calamari is opaque and tender.
- Taste the sauce and adjust the seasoning if needed.
- Remove from heat and garnish with fresh parsley.
- Serve hot with lemon wedges on the side for an extra burst of flavor.
