- 4 boneless, skinless chicken breasts
- 1 cup fresh pineapple chunks (or canned)
- ½ cup brown sugar
- ¼ cup soy sauce
- 2 tablespoons olive oil
- 1 tablespoon minced garlic

- 1 teaspoon cornstarch (optional, for thickening)
- Salt and pepper, to taste
- Green onions, for garnish (optional)
- Sesame seeds, for garnish (optional)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat.
- Add the chicken breasts to the skillet and cook for about 5-6 minutes on each side, or until they are golden brown and fully cooked. Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
- Stir in the pineapple chunks and brown sugar, allowing the sugar to dissolve and create a syrupy sauce.
- Pour in the soy sauce and mix well to combine all ingredients.
- If you prefer a thicker sauce, mix cornstarch with a tablespoon of water and add it to the skillet. Stir continuously until the sauce thickens.
- Place the chicken back in the skillet, coating it with the sauce. Let it simmer for an additional 5 minutes to absorb the flavors.
- Remove from heat and garnish with green onions and sesame seeds if desired.
- Plate the chicken with a generous amount of sauce on top.
