Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh pineapple chunks (or canned)
  • ½ cup brown sugar
  • ¼ cup soy sauce

  • 1 teaspoon cornstarch (optional, for thickening)
  • Salt and pepper, to taste

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the chicken breasts to the skillet and cook for about 5-6 minutes on each side, or until they are golden brown and fully cooked. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
  5. Stir in the pineapple chunks and brown sugar, allowing the sugar to dissolve and create a syrupy sauce.
  6. Pour in the soy sauce and mix well to combine all ingredients.
  7. If you prefer a thicker sauce, mix cornstarch with a tablespoon of water and add it to the skillet. Stir continuously until the sauce thickens.
  8. Place the chicken back in the skillet, coating it with the sauce. Let it simmer for an additional 5 minutes to absorb the flavors.
