- 680 g (1.5 lb) carrots, peeled and cut into 1.5 cm (1/2-inch) thick slices
- 30 g (2 tablespoons) unsalted butter
- 60 g (1/3 cup packed) light brown sugar
- 3/4 tsp Diamond Crystal kosher salt
- 1 tbsp (15 ml) fresh lemon juice
- 60 ml (1/4 cup) water or low-sodium vegetable broth
- Optional: 1/8–1/4 tsp ground cinnamon or ground ginger
- Fresh parsley or chives for garnish
Instructions
- Prepare the carrots by peeling and slicing them on a diagonal into 1.5 cm (1/2-inch) pieces.
- Melt the butter in a skillet over medium heat and add the brown sugar, stirring until dissolved.
- Add the carrots, water or broth, and salt to the skillet; cover to steam cook.
- Uncover and raise heat to medium-high, cooking until the liquid evaporates and a glaze forms.
- Finish by stirring in lemon juice and adjusting salt, then serve garnished with parsley or chives.
Notes
For a dairy-free version, substitute coconut oil for butter. Can substitute maple syrup for brown sugar but glaze will be less thick.
