Ingredients

  • 2 large eggs
  • 4 slices of bacon
  • 1 medium tomato, sliced
  • 1 cup of lettuce (romaine or spinach)
  • 2 tablespoons mayonnaise
  • 1 tablespoon mustard (optional)
  • Salt and pepper, to taste
  • Butter or oil for cooking eggs

Instructions

  1. In a skillet over medium heat, cook the bacon until crispy. Transfer to a paper towel-lined plate to drain excess grease.
  2. In the same skillet, lightly toast the bread slices until golden brown on both sides. Remove and set aside.
  3. In a small bowl, whisk the eggs and season with salt and pepper. In the skillet, add a bit of butter or oil and scramble the eggs until fully cooked. Set aside.
  4. Start with one slice of toasted bread. Spread mayonnaise and mustard on top.
