- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped (red or yellow)
- 1 can (14 oz) diced tomatoes
- 1 cup vegetable or fish broth
- 1 can (14 oz) coconut milk
- 1 tablespoon lime juice
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper, to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Cut the fish fillets into bite-sized pieces and set aside.
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sauté for about 3-4 minutes until the onion becomes translucent.
- Stir in the chopped bell pepper and cook for another 2-3 minutes.
- Add the diced tomatoes (with juices) to the pot, mixing well.
- Add the vegetable or fish broth and bring the mixture to a simmer.
- Pour in the coconut milk and stir until combined.
- Add lime juice, paprika, cumin, salt, and pepper. Stir well to incorporate the spices.
- Gently add the fish pieces to the pot, ensuring they are submerged in the broth.
- Allow the stew to simmer for about 10-15 minutes, or until the fish is cooked through and flakes easily.
- Remove from heat, garnish with fresh cilantro, and serve with lime wedges on the side.
