Ingredients

- 1 medium beet (150–200 g)
- 2 tbsp chia seeds
- 1 cup water (or coconut water)
- 1 tbsp lemon juice
- 1 tsp honey (optional)
Instructions
- Gather all ingredients and tools.
- Peel and chop the beetroot into cubes or grate it.
- Extract beet juice using a blender or juicer.
- In a jar, mix chia seeds with water and let them soak for 10–15 minutes.
- Combine beet juice with soaked chia, and balance with lemon and honey to taste.
- Chill for 10–30 minutes before serving.
- Serve with garnish if desired.
Notes
Start with a milder beet-to-water ratio if new to beet flavors. Use cold ingredients for immediate chill.
