Description
This creamy and flavorful Beer Cheese Dip combines rich cheddar and smoked gouda with a touch of beer, Dijon mustard, and Worcestershire sauce to create a perfect party appetizer.

- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup beer
- 1/2 cup whole milk
- 1 1/2 teaspoons Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon smoked paprika (optional)
- Sea salt and black pepper, to taste
- 2 cups (8 ounces) freshly-shredded cheese (half sharp cheddar, half smoked gouda)
Instructions
- Heat butter in a large saucepan or sauté pan over medium-high heat until melted. Add flour and whisk continuously until completely combined, forming a smooth roux.
- Gradually whisk in the beer, whole milk, Dijon mustard, Worcestershire sauce, and smoked paprika. Continue whisking until the mixture is smooth and starts to thicken.
- Cook the mixture over medium heat until it thickens and is just about to simmer. Then reduce the heat to low to prevent burning.
- Add the shredded cheese one handful at a time, whisking continuously to melt the cheese completely and create a smooth, creamy dip.
- Taste the dip and adjust with sea salt and black pepper as desired. Serve immediately for best texture.
Notes
- The dip will thicken further as it cools.
