Ingredients

- 450 g flank steak or sirloin, thinly sliced
- Salt & black pepper
- 15 ml vegetable or canola oil
- 30 g butter
- 150 g yellow onion, thinly sliced
- 200 g cremini or button mushrooms, sliced
- 2 cloves garlic, minced
- 15 g all-purpose flour or 8 g cornstarch
- 360 ml low-sodium beef broth
- 10 g Dijon mustard
- 5 ml Worcestershire sauce
- 120 g sour cream
- 10 g parsley, chopped
- Egg noodles or rice, to serve
Instructions
- Slice the beef and season it
- Brown the beef quickly
- Sauté onions and mushrooms
- Add garlic and thicken
- Deglaze and make the sauce
- Finish the sauce with sour cream
- Adjust seasoning and serve
- Timing cues and serving doneness

For a gluten-free version, substitute flour with cornstarch. For a dairy-free version, replace butter with oil and sour cream with coconut yogurt.
