- 1 pound boneless, skinless chicken breasts, sliced into thin strips
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 3 cloves garlic, minced

- 2 tablespoons red curry paste
- 1 can (400 ml) coconut milk
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- In a large skillet or wok, heat the vegetable oil over medium heat.
- Add the chopped onion, garlic, and ginger to the skillet. Sauté for 2-3 minutes until fragrant and the onion is translucent.
- Add the sliced chicken to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
- Stir in the red curry paste and cook for another 2 minutes to release its flavors.
- Slowly add the coconut milk to the skillet, stirring to combine. Bring the mixture to a gentle simmer.
- Add soy sauce, lime juice, salt, and pepper. Allow the sauce to simmer for an additional 5 minutes to thicken slightly.
- Finally, stir in the chopped basil leaves and let them wilt in the sauce for about 1 minute before removing from heat.
