Ingredients
- Soft corn tortillas or flour tortillas
- Ground beef
- Fresh large eggs
- Cheddar cheese
- Bell peppers
- Onions
- Tomatoes
- Cumin
- Chili powder
- Garlic powder
- Salt
- Milk or non-dairy alternative
- Fresh cilantro (optional for garnish)
- Avocado (optional for garnish)
- Salsa (optional for garnish)

Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef. Break it apart with a spatula until fully cooked. Drain excess fat if needed.
- Toss in diced onions and bell peppers to the beef. Sauté for about 5 minutes until they are soft. Add diced tomatoes, cumin, chili powder, garlic powder, and a pinch of salt. Stir well and let it simmer for an additional 3 minutes.
- In a separate bowl, whisk the eggs with a splash of milk (or a non-dairy alternative). Pour into a non-stick pan and scramble over medium heat until just set. Remove from heat.
- Take your taco shells and fill each one with the beef and vegetable mixture. Top it off with scrambled eggs and a generous sprinkle of cheese.
- Place the filled tacos on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and golden.
- Once baked, remove the tacos from the oven. Let them cool for a few minutes before serving. Top with fresh cilantro, avocado, salsa, or a dollop of sour cream if desired.
